Description
 L-Sorbose is a ketohexose monosaccharide. It is often used in the commercial production of ascorbic acid. L-Sorbitol can be produced by fermentation of sorbitol by various bacteria. L-Sorbose induces expression of a variety of enzymes in the fungus Trichoderma reesei, including cellulases, xylanases, and α-arabinofuranosidases. L-Sorbose causes changes in the composition of cell walls in many fungi resulting in morphological changes.
